Ingredients
  • 4 large Idaho Baking Potatoes
  • 1 small onion, grated
  • 2 cloves garlic, crushed
  • 1/3 cup plus 3 Tbs. sour cream (on sale!)
  • 2 ounces cheddar cheese, grated
  • 2-3/4 Tbs. fresh chives, chopped
Cooking Directions

Preheat oven to 375°F. Scrub potatoes well and pierce skin in several places with a fork or skewer. Place potatoes in oven and bake 1 hour, or until tender. Cut tops off potatoes and carefully scoop out most of the flesh with a spoon, leaving skin intact. Combine hot potato with remaining ingredients in a bowl. Spoon mixture back into potato shells.
