Pound turkey between pieces of plastic wrap. Sprinkle turkey with lemon pepper; set aside. Combine vegetables and water in saucepan. Bring to a boil; reduce heat, cover and simmer for 5 minutes or until tender-crisp. Remove vegetables, reserving liquid in pan. Place vegetables on turkey. Roll up and secure with toothpicks. Cook turkey rolls in butter in skillet over medium heat for 15 minutes, turning frequently until evenly browned. Prepare sauce: To 2/3 cup reserved liquid from vegetables, add white wine, cornstarch, lemon juice and grated lemon zest. Cook over medium heat, stirring constantly until thickened. Serve over turkey.
