Combine first 3 ingredients and salt and pepper to taste in a bowl and mix with a fork. Mixture will be lumpy. Stir in ham, green pepper and scallions. Melt butter in a heavy nonstick skillet over medium heat until melted and bubbly. Gradually pour ham mixture into skillet. Cover and cook 10-12 minutes over medium low heat, until almost set. Sprinkle with cheese. Cover and cook 3-5 minutes more, until cheese is melted. This recipe serves 6 people. Due to the nature of this recipe, it adjusts the number of servings in multiples of 6 only.
