Ingredients
  • 1 Tbs. vegetable oil
  • 1 onion, sliced
  • 1 green bell pepper, cut into strips
  • 1 lb. flank steak or top sirloin, cut into strips (on sale!)
  • 3 garlic cloves, minced
  • 1/2 tsp. chili powder
  • 1/4 tsp. oregano
  • 1/4 tsp. black pepper
  • 1/4 cup water
  • 1 fresh tomato, cut into wedges
  • 8 8 inch flour tortillas, warmed
Cooking Directions

Cook onion and green pepper in an oiled skillet over medium high heat until tender; set aside. In same skillet, brown meat; drain fat. Mix in garlic and other seasonings and water. Bring mixture to a boil; reduce heat to low and cook uncovered for 5 minutes. Return onions and bell peppers to skillet; add tomatoes. Heat through and serve with warmed tortillas.
